Asian Lime Ribs
The rub,
Combine:
2T ground cinnamon
2T kosher salt
2T black pepper coarsely ground
1T ground coriander
After ribs have been prepped (see internet for proper rib prep) rub them (vigorously) (both hands) (really get into it)with the dry rub, cover and refrigerate for an hour.
Roast the ribs in a shallow pan (water in the bottom) in the oven covered till falling off the bone good. (this can be done way ahead)
Now the good part, fire up the grill! Really coat the grill with non-stick spray the sauce has sugar in it and gets sticky yummy good.
The Asian lime sauce
Stir together:
3T ginger, coarsely chopped
2T garlic, coarsely chopped
¾ cup rice vinegar
½ cup low sodium soy sauce
½ cup ketchup
½ cup chopped fresh cilantro (I like a little more)
1/3 cup fresh lime juice
1/3 cup brown sugar
¼ cup hoisin sauce
2T dark sesame oil
1T crushed red pepper flakes
Set the grill at medium-high, coat the ribs with the sauce place on the grill. When they begin to develop a little black char on them, flip them and brush them again with the sauce….Repeat this twice on each side…bout 20 mins…
Serve the extra dipping sauce on the side for dunking!
